A market-style restaurant celebrating global cuisine through its essential elements. Inspired by the energy of curated stalls and counters, each space showcases produce and culinary expertise with a refined, New York influenced farm-to-table approach. Guest interaction sits at the heart of the experience, elevating dining into something immersive and memorable.
Our design places produce, craftsmanship, and culinary theatre at the forefront; redefining the concept of all-day dining. This is a restaurant designed for discovery, where each visit offers something new.

Scale was a defining challenge
With 600 indoor covers and 300 on the terrace, scale was a defining challenge. Rather than a traditional all-day dining format, we created a dynamic environment of distinct yet connected spaces.
The restaurant is carefully composed of a series of zones - each with its own focus, identity, and material language - without relying on cultural themes. Instead, the emphasis is on food typologies, expressed through layout, detailing, and a curated palette of FF&E.
The result is a seamless environment: open, fluid, and intuitive. A space that feels expansive yet never overwhelming.
Flexible by Design
While primarily operating as a market-style buffet with live cooking, the restaurant is designed to transition effortlessly into an à la carte experience.
This flexibility is embedded in the planning—allowing the operator to adapt quickly, while maintaining a consistent and elevated guest journey.


A careful orchestration of detailing, layout, and FF&E creates a dynamic yet cohesive environment; one that blends continuity with diversity and delivers a rich, engaging dining experience.
